How do I calculate the cost per unit for baked goods?+
Add up all ingredient costs (flour, butter, eggs, sugar, chocolate chips, etc.), your packaging costs per unit, and your labour time at your hourly rate. Divide the total by the number of units your batch makes. The calculator does this automatically.
How do I handle fluctuating ingredient costs for baking?+
Enter the current price you paid for each ingredient. The calculator uses that price to work out cost per unit. When ingredient prices change (butter and eggs fluctuate frequently), re-run the calculation with the updated price to see how it affects your margins.
Do I need to include packaging costs for baked goods?+
Yes. Packaging is a significant cost for bakers that is easy to overlook: cellophane bags, bakery boxes, twist ties, labels, and tissue paper all add up. Enter each packaging component separately to get an accurate cost per unit.
What is a good profit margin for cottage-baked goods?+
A healthy margin for homemade baked goods is typically 50 to 65 percent, meaning your selling price should be at least 2.5x to 3x your true cost per unit. The calculator shows your current margin and suggests pricing at competitive, premium, and luxury tiers.
How much should I charge for homemade cookies or bread?+
It depends on your true cost per unit. A dozen cookies that cost $3.50 to make should retail for at least $9 to $12. A loaf of artisan bread that costs $2.80 should sell for at least $8 to $12. See
